Cream of butternut squash soup with apples and diced pancetta

This smoky cream of squash and apple soup is decadent and delightful. Add diced pancetta for even more flavour!

INGREDIENTS

  • 175 g (1 package) Fantino&Mondello Original Diced Cooked Pancetta    
  • 4 cups butternut squash, peeled and cut into medium-sized cubes
  • 2 Cortland (or any other variety) apples, peeled, cored, and cubed
  • 1 litre vegetable or chicken broth
  • 1 cup  chopped leek, white part only
  • 1 tablespoon chopped fresh ginger
  • 1 cup 35% cream
  • Sufficient quantity olive oil
  • 2 tbsp  chopped chives
  • (To taste) salt
  • (To taste) tabasco sauce

PREPARATION

  1. In a large frying pan, cook the diced pancetta in olive oil until nicely coloured. Remove from pan and set aside.
  2. Using the same frying pan, add the cubes of squash, leek, apple, and ginger, and simmer without browning for approximately 5 minutes.
  3. Add the broth and let simmer until the leek and squash pieces are tender, or from 15 to 20 minutes depending on the size of the vegetables.
  4. Blend the mixture for a smooth result. Add a small amount of broth if the mixture is too thick. Season with salt, add a little tabasco sauce, and set aside.
  5. Use a whisk to slightly thicken the cream, and add the chives. Set aside in the refrigerator.

Presentation:
To serve, pour the soup into appropriate bowls or plates, top with the diced pancetta mixture and a dab of fresh cream with chives, and decorate with a few apple slices.

TIPS

Swap out the apples for delicious fall pears. Thin the soup with a little apple juice immediately before serving to enhance the fruit flavour.
